Pulled Pork

Pulled pork from Bark Barbecue: smoked over white oak and infused with subtle Dominican seasoning, then served with the house BBQ sauce that regulars at the Time Out Market DUMBO location know to order without hesitation. Ruben Santana launched Bark from his Ozone Park, Queens backyard in 2020 after teaching himself Central Texas smoking technique; the pulled pork is where the smoke and the island flavor come together most naturally.

INSTRUCTIONS / STORAGE

• Bark Barbecue ships Tuesday-Thursday of each week.
• Orders cannot be shipped to P.O. Boxes.
• Orders shipped to Alaska and Hawaii via 2-day will incur an additional $20 charge or $35 for Overnight Shipping. Sorry guys!

• Meat ships frozen with ice packs, may thaw in transit.
• Upon arrival, store in the refrigerator for up to 7 days or in the freezer for up to 1 month.
• Once ready to cook, thaw meat in the refrigerator overnight or for up to 24 hours. When fully thawed, keep meat at room temperature for no more than 4 hours.
• If the meat is partially or fully frozen, let it reach room temperature before preparing.

To Serve

• If frozen, defrost overnight in the vacuum-sealed package, then bring to room temperature.
• Preheat the oven to 330° F.
• Remove meat from the vacuum-sealed bag and place in a shallow oven safe dish.
• Cover tightly with foil.
• Heat for 20-30 minutes, stirring once halfway.
• Remove from oven and stir.
• Serve & enjoy!
• Tip: keeping the pork tightly covered traps the natural moisture so it stays juicy, target internal temperature 140°F.
