Developed by Chef Thomas Keller and shepherd Keith Martin in the principles of respectful, low-stress husbandry, Elysian Fields ground lamb comes from holistically raised animals known for tender, pure flavor and consistent texture. Ground to a 90/10 meat-to-fat balance, it’s naturally tender and delicately flavored – built to carry burgers, meatballs, and everything in between. It’s the same Pure Bred lamb, raised under the Safe Alternative method, turned loose for everyday cooking.

INSTRUCTIONS / STORAGE

• Pure Bred Lamb by Chef Thomas Keller & Keith Martin ships Monday through Thursday each week
• Orders cannot be shipped to P.O. Boxes
• Orders shipped to Alaska and Hawaii via 2-day will incur an additional $20 charge or $35 for Overnight

• Lamb ships fresh with ice packs, may thaw in transit.
• Upon arrival, refrigerate immediately for 7-10 days or store in the freezer for up to 6 months.

To Serve

Browning

• Brown over medium heat until no pink remains ,145-165°F internal temperature.

Grilling

• Grill to internal temp of 145-160°F.
