These beef medallions bring that signature recipe to a more intimate format: three packs of hand-trimmed beef, fully cooked, vacuum-sealed, and ready to warm and serve. The same tenderloin tradition that has made Aberdeen the most requested caterer in the Lowcountry, scaled for the dinner table rather than the reception hall.

• Each medallion weighs approx. 9 oz.
• Arrives fully cooked and vacuum-sealed
• Serves approx. 4-5 people as an Entrée
• Serves approx. 5-6 people as Hors d’oeuvres

INSTRUCTIONS / STORAGE

• Aberdeen Catery ships Monday – Friday of each week
• Orders cannot be shipped to P.O. Boxes
• Orders shipped to Alaska and Hawaii via 2-day will incur an additional $20 charge or $35 for Overnight Shipping. Sorry guys!

• The medallions ships frozen with ice packs, may thaw in transit
• Upon arrival place in the refrigerator for up to 10 days or in the freezer for up to 12 months

To Serve

• If preparing from frozen, thaw in the refrigerator 12 hours before serving
• Allow the sealed package to rest at room temperature for approximately 30 – 45 minutes
• Bring a pot of water to a full boil, then turn off the heat
• Place the still-sealed package into the hot water (the package may be gently adjusted to fit your pot)
• Let the medallions sit in the hot water for 10-15 minutes
• Remove from water, open the package

For Entrée Service

• Slice the beef tenderloin medallions across the grain into &#8531-inch slices
• Arrange on a warm platter and serve immediately

For Hors d’Oeuvres

• Slice the beef tenderloin medallions across the grain into &#188-inch slices
• Arrange neatly for easy, bite-sized serving
