Twelve of Kossar’s hand-rolled, brick-oven baked bialys – the Lower East Side institution has been making them since 1936, making it the oldest bialy bakery in the United States – with six of the bakery’s kettle-boiled, stone-baked bagels included free. The bialy is the Bialystok tradition: softer and lighter than a bagel, onion-filled indentation instead of a hole; the Kossar’s bagel, added to the menu in 1998, is kettle-boiled then baked on burlap boards and directly on stone. Eater called the bialys the best in New York; the bagels are why Huffpost put Kossar’s in their top five.
