There’s something unexpected about slicing into a wheel from a Thomasville, Georgia creamery and finding olives, Calabrian chiles, basil, sun-dried tomato, and dill running through the paste – but that’s exactly what Sweet Grass Dairy built with Cypress, a semi-firm pasteurized wheel launched in 2024 that brings Mediterranean pantry flavors into unmistakably Southern hands. The ingredients are flecked throughout rather than folded in as an afterthought, giving each slice a savory, herbaceous brightness and a clean finish that reads equally well on an antipasto platter, a flatbread, or a panini. A Bronze medalist at the 2025 World Cheese Awards in its debut year, it’s the most visually arresting cheese on any board it lands on. Perfect for an aperitivo spread, a flatbread night, or the person who thinks they’ve seen every cheese.

INSTRUCTIONS / STORAGE

• Sweet Grass Dairy Shop ships Monday-Thursday of each week.
• Orders cannot be shipped to P.O. Boxes.
• Orders shipped to Alaska and Hawaii via 2-day will incur an additional $20 charge or $35 for Overnight Shipping. Sorry guys!

• Cheese ships refrigerated with ice packs, which may thaw in transit.
• Upon arrival, transfer all cheeses to the refrigerator immediately.
• Cypress can be stored in the refrigerator for up to 30 days.

To Serve

• Remove cheese from the refrigerator 30-45 minutes before serving to allow it to come to room temperature for best flavor.
• Slice for a Mediterranean board with olives, cured meats, and bread.
• Excellent crumbled over a salad or melted onto flatbread.
