Jaarsma Bakery’s Figure 8 Cookies: puff pastry twisted into the figure-eight shape, sprinkled with sugar before baking – the light, flaky, lightly sweet pastry from the Pella, Iowa institution Harmon Jaarsma founded in 1898 using Holland recipes. All baked from scratch daily at the bakery on Pella’s town square that great-great-granddaughter Lisa and her husband Carl run today.
