Named for the first rotational grazing pasture in the Little family’s Thomasville, Georgia farm – where barn-free cows supply the milk – Green Hill is the double cream that launched one of the South’s most decorated creameries. Each small wheel is hand-ladled and aged about two weeks under a delicate bloomy rind, developing a paste that’s silky and buttery with quiet notes of mushroom, cream, and sea salt: closer to a richer, more approachable Brie than a sharp Camembert, and the first thing to vanish from any board. INSTRUCTIONS / STORAGE
- Sweet Grass Dairy Shop ships Monday-Thursday of each week.
- Orders cannot be shipped to P.O. Boxes.
- Orders shipped to Alaska and Hawaii via 2-day will incur an additional $20 charge or $35 for Overnight Shipping. Sorry guys!
STORAGE
- Cheese ships refrigerated with ice packs, which may thaw in transit.
- Upon arrival, transfer all cheeses to the refrigerator immediately.
- Green Hill (soft-ripened) can be stored in the refrigerator for up to 2 weeks.
To Serve
- Remove cheese from the refrigerator 30-45 minutes before serving to allow it to come to room temperature for best flavor.
- For a warm option, place the whole wheel in a 350°F oven for 5-7 minutes until the center is gooey.
- Drizzle with honey and serve with crusty bread, sliced apples, fig jam, or candied nuts.
