Live abalone ship cold and should be cooked or shucked and cleaned the day you receive them.
Keep live abalone cool and moist until ready to prepare.
Abalone should not smell. If they are stinky, the meat is off-white, or the foot has curled up, the animal may have died – do not eat it.
Once cooked and shucked, meat can be refrigerated for up to 4-5 days or frozen for up to 3 months.

To eat raw or fried: Hold the abalone shell side down. Run a dull knife underneath the meat around the edge to remove it from the shell. With a paring knife, cut off the gut ball on the underside of the meat and discard. The meat is now ready to use.
To grill: Place the shell directly on the grill to cook and remove the guts before eating.
