To Serve

New York Strip Steak

• Let the steaks sit at room temperature for 20 minutes.
• Preheat the oven to 450 degrees F. Season the steaks on both sides with kosher salt and pepper to taste.
• Heat a heavy pan such as a cast iron skillet (this type of pan is recommended) over high heat.
• Add any neutral-tasting oil to the pan. Place the strip steaks in the pan in a single layer.
• Cook for 3-4 minutes per side or until deep golden brown.
• Add the butter to the pan. After the butter has melted, add 2 garlic cloves (crushed with the back of a large knife/cleaver and the skin left on) and 1 -3 thyme sprigs to the pan. Stir to combine.
• Spoon the butter mixture over the steaks. Insert a probe thermometer into the thickest part of one of the steaks.
• Place the meat in the oven and bake for 5-7 minutes or until the thermometer registers 140 degrees F for a medium steak.
• Remove the pan from the oven. Let the steak rest for 5 minutes. Spoon the pan drippings over the steak, then slice and serve immediately.

Quart New England Clam Chowder

• Thaw in refrigerator before heating (approximately 24 hours).
• Pour into a sauce pan, and heat over medium, stirring occasionally, until steaming hot (internal temperature of 165F).
• Enjoy!

Lobster Tails

• In a small bowl, combine the butter, salt, pepper, garlic powder, paprika, lemon juice, and parsley, then brush the mixture evenly over the lobster meat.
• Place the tails onto a baking sheet, then bake for approximately 12-15 minutes, until the lobster is fully cooked but not rubbery

Fine French Green Beans

• To thaw, place green beans in a microwave-safe container. Add water. Cover.
• Microwave until green beans are thawed but not hot, about 45 seconds. Drain and set aside.
• Heat olive oil in a cast iron or nonstick skillet over medium-high heat until oil shimmers but does not smoke. Season to taste with fresh crushed garlic and fresh cracked black pepper. Cook, stirring frequently until garlic is light brown.
• Add the drained green beans to the skillet. Shake the pan to coat the beans in the oil. Cook until the beans are hot, about three to four minutes.
• Season with kosher salt to taste.
