Jasper Hill Farm’s Raw Milk Rockstars: a sampler of the finest raw-milk cheeses made from the farm’s own Ayrshire herd in Greensboro, Vermont – Alpha Tolman, Bayley Hazen Blue, Whitney, and Winnimere. Brothers Andy and Mateo Kehler have been making these since 2003; raw cheesemaking preserves the milk’s native cultures and produces a true taste of the Northeast Kingdom landscape.

This package serves 8-10 people and includes

• Alpha Tolman Cheese Wedge (12 oz.) – This raw-milk Alpine-style cheese recalls classics like Gruyere or Appenzeller. With flavors of toasted nuts and cured meat, its firm smooth texture is satisfying on a charcuterie board but also great for melting in recipes or fondue.
• Bayley Hazen Blue Cheese Wedge (8 oz.) – Our flagship raw milk blue cheese. Densely creamy with bold yet balanced flavors and a handsome natural rind. Cultured cream flavors are laced with notes of toffee and anise spice. Reserve Supreme Champion, International Cheese Awards.
• Caspian Cheese Wedge (12 oz.) – Our raw milk tomme-style cheese has bright, buttermilk flavors at its center and a more complex mushroom character near the handsome natural rind. Inspired by French staples like the rustic Tomme de Savoie.
• Whitney Cheese Wedge (12 oz.) – A raw-milk raclette-style wheel made from the farm’s own Ayrshire herd in Greensboro, Vermont – buttery and smooth with a peachy washed rind that lends a gentle aromatic funk.
• Barr Hill Raw Honey (2.5 oz.) – Raw honey is never heated or pasteurized, leaving beneficial traces of pollen and propolis, and sourced by our friends at Barr Hill Distillery, where they use it to craft an incredible line of spirits.
• Though our nutrition facts list a serving as 1oz, a good rule of thumb is to plan on about &#189 to &#8532 oz of each cheese per person.

INSTRUCTIONS / STORAGE

• Jasper Hill Farm ships Wednesday of each week
• Orders cannot be shipped to P.O. Boxes
• Orders shipped to Alaska and Hawaii via 2-day will incur an additional $20 charge or $35 for Overnight Shipping. Sorry guys!

• Boxes ships with ice packs, may thaw in transit. Cheese may arrive at room temperature.
• Keep unopened small wheels in original wrapper. Store cut wedges or open wheels in airtight container. Enjoy-by dates are marked on individual packages.
• Store honey indefinitely in a cool dry place, away from direct sunlight.
