Ropa Vieja

For fifty years, Sergio’s in Miami has served a plate that defines Cuban American comfort – ropa vieja, black beans, and maduros, cooked from the same family recipes that built a neighborhood institution. The beef is slow-braised in Creole sofrito until it shreds with a fork, paired with slow-cooked black beans and sweet plantains fried until the edges caramelize. Savory, sweet, and soulful all at once – this is the meal that carried three generations of the Gazitua family and put their small sandwich shop on the map.

INSTRUCTIONS / STORAGE

• Sergios Cuban American Kitchen ships Tuesday through Thursday each week
• Orders cannot be shipped to P.O. Boxes
• Orders shipped to Alaska and Hawaii via 2-day will incur an additional $20 charge or $35 for Overnight

• Items ship frozen with ice packs, may thaw in transit.
• If items arrive partially thawed but are still cool to the touch, that’s normal for frozen shipping; simply freeze or refrigerate right away.
• Upon arrival, place all items in the freezer until ready to prepare.
• For best quality and safety, keep frozen for up to 1 month.

To Serve

Ropa Veja & Beans

• Place items from freezer to refrigerator 24 hours before use to begin thawing.
• Bring water to a boil over medium-high to high heat.
• Place sealed bags in water until product reaches an internal temperature of 165°F (about 30 minutes).
• Remove bag carefully, confirm temperature is 165°F and serve.

Maduros

• Place product from freezer to refrigerator 24 hours before use to begin thawing.
• Heat oil in fry pot to 300°F and fry maduros for about 2 minutes per side, until caramelized in color.
• Remove carefully, drain excess oil on a napkin or strainer, and serve.
